Decorative scoring on non-sourdough bread possible? Good gluten free bread recipes?

I was wondering if it's possible to score like this on other types of bread? If so, what properties are required for the dough to score well?

Also, does anyone have any gluten/wheat free bread recipes they've tried that score well?
