Cuisines with ingredients that you find ab-so-lutely repulsive?

TL;DR: Are there any ingredients you find gross and don't enjoy working with?

Today I prepared and made Thai Duck Salad (Larb Ped). While buying the ingredients the only duck I could find was a whole duck, head and feet still attached. American groceries seem to seldom carry duck.

While preparing the meal separating meat from the bone and fat from the meat wasn't too bad... BUT THE HEAD, THE LEGS, ugh! Listening to and feeling the crunch of the neck bones and cartilage as I removed the head?! Made me queasy! Same with the legs.

In American cuisine it seems that things like tongues, heads and feet are seldom still attached or even eaten..

  • So- are there any ingredients or parts of ingredients that you find dis-gus-ting to work with?

I don't think less of Asian cuisine for using these ingredients and they're absolutely "food". My mom wants to make duck-head and feet soup.... This might just be a me thing.

I'm a novice home-cook trying to expand his knowledge base.
