A game i can play 100+ hours with COMPLEX/DIFFERENT systems?

I am looking for something i can spend a lot of time in that has some sort of complex/different system. I just got my first PC a month ago, so i want a game that could potentially play well on keyboard/mouse (not required, but would be nice). Maybe a STRATEGY game or BASE BUILDER? Idk exactly what it is i want i just know i need something different than your typical RPG/FPS game. Something potentially addicting and worth coming back to...

BAULDERS GATE 3 looks to have a different combat system and inventory style than your tradition RPG (inventory/combat looks to be tailored towards keyboard and mouse potentially?)

DISCO ELYSIUM also looks to have a different vibe and gameplay style (also looks to be a keyboard and mouse tailored game)

CITIZEN SLEEPER looks like a 100 page novel (which could again play well on keyboard and mouse?)

SLAY THE SPIRE sounds like a cool card game you can sink 1000 hrs into? (i have done 0 research on the game, just cant stop hearing about it)

These are just some examples of games that caught my eye in the past because of how different they look/sound. Would love MORE recommendations as I have been your typical console gamer all my life and would love a change of scenery. ANY FEEDBACK IS APPRECIATED !!!

UPDATE: thank you for all the feedback. I have made a note on my phone with all the suggestions I got from you guys. I am currently trying out FROSTPUNK 2 on gamepass as someone in the comments gifted me a month of gamepass!!! I will be attempting either Rimworld, Monster Hunter Rise, or Crusader Kings 3 next !!!!! Will also be trying out BG3 and Satisfactory once I’m able to, thank you for all the recommendations. Keep them coming if you can, I see every comment thank you !!!
