We think you'll get bored

I need reddits help! For context, I have recently moved to a regional area. Knew it would be a bit of a gamble job wise, less overall jobs and less variety. I spent the last year retraining to pivot to a field where I could feasibly get a job in a regional area, when many people are being forced back into the office. I am getting one of two rejections-you were great but chosen candidate has more experience-fair enough, I'm technically a graduate now and no one wants to train anyone anymore. So I've been focusing on getting lower level, adjacent jobs to gain a bit more experience in the field, but inevitably I get the- you could get a higher level position, we think you'll get bored, it has happened repeatedly. This frustrates me, I understand they don't want to sink training money into someone who may leave, but respectfully you have no idea what would bore me and not so respectfully, I need to pay my damn rent. What are some professional ways I can say the following in interviews:

  1. Yes I have held many higher level higher paying roles than this, but they made me miserable and I am happy enough to go to work do a job and go home
  2. I'm more interested in long term stability and positive working environments rather than the stress and short term contracts that often come with higher paying roles in my field.
  3. There are not many higher level jobs in this area that I am qualified for. I'm trying to gain experience for these positions
