Do you bend adjacent strings OVER or UNDER your fretting finger?

There is a sax solo in the latest Sleep Token single, Emergence. I loved it and transcribed it for guitar. It's not as smooth compared to the sax version, the Morgan amp suite helped me to get a nice tone but not sure if it is a bit harsh. What do you think?
